Sweet Onion Salad

Sweet Onion Salad Food Photography

Mix it up!!  Don’t be afraid.  Salads can be more than lettuce.  Green beans make a perfect choice.

  • 1 cup sweet onions
  • 12oz fresh green beans
  • 1 cup baby tomatoes halves

  • 3 cloves roast garlic
  • 1/4 cup white balsamic vinegar
  • 2 tablespoons grape seed oil
  • salt and cracked pepper

Blanch green beans in a large pot of well salted boiling water until bright green in color and tender crisp, roughly 2 minutes.  Drain and shock in a bowl of ice cold water to stop from cooking.

In a large bowl, add onion, green beans, tomatoes, and toss with dressing.  Chill and serve.

Split the difference, part for the salad.  Take the other part and add color peppers.  Serve hot for dinner.  Take the salad for lunch the next day… 2 in one!
